Lots of buzz about the year of the Crimson Horse, and with Summer-Heat soon upon us, I thought this was timely.  Source: Healing Soup FB page.

Simple soup with three ingredients:

  1. mung beans

  2. yi yi ren (薏苡仁 coix lacryma-jobi, Job’s Tear)

  3. crystal rock sugar.

This soup clears Summer-Heat and drains Dampness. Great for climates that are hot and humid.

The amount of beans and Job's Tears are according to personal liking. Some people like thick soups and some like it runnier.

Pre-soaking the beans and Job's Tears helps to reduce cooking time and makes the soup creamier.

1. Soak about 1/2 cup each of mung beans and Job's Tears with cold water over night.

2. Add mung beans and Job's Tears to a pot with 4-5 cups of water.

3. Bring to boil and simmer for 30 minutes.

4. Stir in crystal rock sugar to taste

5. Simmer for another 15 minutes.

Enjoy!
